multiple monitors not being detected [Resolved, thanks]

BTW, thank you for the manual. Here's a strange one:
$ xrandr --listmonitors
xrandr: Failed to get size of gamma for output default
Monitors: 1
0: +*default 1920/508x1080/286+0+0 default

I googled Bee-Link ser7. According to the current website it's a Ryzen 7 with a AMD Radeon 780M GPU. I don't have any knowledge about AMD GPUs. Further goolging of Linux AMD Radeon 780M GPU does seem to indicate that they may have some extra driver installation requirements which might apply to older Linux versions: I found a reddit post from last year. Further searching might yield further info.

Background info on AMD GPU's might be obtained from places such as Arch wiki on AMDGPU.

You might also try a live-usb-stick of a leading edge distro such as Manjaro or Tumbleweed - that might at least tell you weather the GPU now works out of the box with recent kernels.

Just another thought. A live usb stick of Linux Mint 21.3, Cinnamon....would also tell you if the problem you are having is OS related, or not.

The above is xorg.conf from the old computer. It only has the video card info that's correct, the rest seems like garbage to me.

Just two monitors

Ok! Got it working! I can't re-find what I toggled on as it's not there anymore. In computer configuration under graphical settings and way down the list was Xorg. I needed the amdgpu too! I had thought both were picked earlier. I had to go find a VGA cable as one of the monitors died during all of this. But thanks alot for all your patience!
