What would be the correct color settings for any printer?

I visited both websites. The Epson website does not have drivers for Linux; It does have drivers for Android. HP does not support Linux.

HP does not appear under admin/ Printers. Both printers have been reset and connected to wi-fi.

It's set on the printer it's self. look in the manual it will tell you if you don't have access to the manual it's available on line here.

once set install and use the hplip-gui tool to setup the printer and manually set that ip address. to install on Debian based distro
Code:
sudo apt install hplip-gui
other distros have it but the install will be different on Fedora distros it's called hplip graphic tool or something similar. Good luck.
wi-fi is correctly set up on both printers.

When I hooked up my Cannon, I found so many packages concerning Cups for so many Canon printer models-categories. All had the label cnijfilter name. At least in the Ubuntu repositories. I only needed to add the one that my Canon model fell under. Worked well without troubles. I just had to select the driver in the printer setup that matched my Canon in the specific category. My Canon MB2100 needed the cnijfilter2 package for inkjet models and the specific driver for my Canon was in there. There are tons of Cannon categories depending on certain models in the repository. I didn't even know this as this Canon I use was used on my dad's windows system for quite a few years. A lucky surprise for me.

If I upgrade to a newer Canon, I'll make sure the model is supported, as it seems most are, with no need for multilib or getting the driver from the printer websites. I wish I had known this before fiddling with Brother. Brother has a few categories in the repository, but very few compared to Canon. :)

I tried to change the printer name and model or add it, but I was unsuccessful. It wouldn't allow me.

I reset my modem and router, and now the other printers show up.

I used a simple gui for cups called... system-config-printer
It was very simple, and allowed me to change the name to anything I wanted, although it defaulted to my printer model, which I use.

Funny thing, We are able to print to all printers from our cell phones with no problems. Android OS looks promissing.

I went to that web page and My specific ET2800 turns NO Matches. Et 2800 / Linux Other / US /Search

This is what I get: Only scanner drivers for ink or deskjet.

Power users may have the ability to tweak and work around Linux, but us normal users are limited. Linux really needs to improve on the Printers issue.
transitioning to Linux from Windows seems relatively easy depending on the Distro. But working with Linux is a whole new monster. I tried to download and install MX Linux KDE on a different machine, and it was a no go.

Now my Epson Printer color settings are all out of wak. Can't seem to print in mono chrome (black and white or grey scale).
What are these settings for?:

You can install your printer in a windoze virtual machine.

Three years ago when I was using Mint Cinnamon 21.1...I couldn't get my scanner to work on the new printer/scanner (the one I use now). So I installed it in my windoze 7 VM...problem solved.

@JulyRC :-

I'm curious as to why you chose "Linux Other". Do I take it that you're not running a 64-bit distro.....that you are in fact looking for 32-bit stuff?

I've been an Epson man for I can't remember how long. Late last year, a WF-2930 replaced a 16-yr old Stylus SX218. And before that, it was a Photo Stylus 830U for around a decade. Prior to that, I was running one of their old dot matrix printers; don't ask me the model, I've long since forgotten..!

Admittedly, their printer drivers are not as good as they used to be, and don't seem to ship with anywhere near the degee of granular control they once had. I still find myself looking for functions - from years gone by - that simply don't exist any longer.

In most cases, that functionality is still there.....but you're NOW supposed to access it from the tiny display on the printer itself! Grrrr.....

Over the years I have seen so many printer troubles with linux. I had an old Epson for the longest time till it just got too outdated.

My somewhat recent experience with Canon, has made me a Canon man now, I think. They are so well supported in Linux is seems. Especially the one I'm using which is rather dated as a inkjet.
