I am looking for a touch&pen supporting convertible for my daughter.

The only convertibles with great Linux support i know, are the X-Series from Lenovo (X1, X3xx Yoga), which also would match the price tag for a used device in good shape.

Are there other recommendable brands and models out there?

I want to introduce her to Linux, but with a modern and desktop approach at the same time.

OK, I am no expert when it comes to tablets [i never got on with them or smart phones] so in general any tablet you can afford with a 250mm or bigger screen, preferably made for any windows, with an intel or AMD CPU will give you a wider choice of distributions and be a lot easier to install Linux to than iPads or Android tabs. Lenovo and dell are always at the top of the list when it comes to recommendations,, but there are some, what I would call basic budget tabs made in China such as the fusion 5, again no recommendations as I have limited experience of them you would need to check if they work with stylus. in terms of cost around €440 new and from €150 used.

I do have to say, Look into Dell, they seem to have good Linux support, and you would probably be able to get it installed with little to no hassle. I can't vouch for the touchscreen models, as I do have some dells that run Linux, but mine are without touch. Still, good place to look. If you can, look at the hardware in-person to see what you'd like.

I'm using an HP Envy x360 convertible (2015 vintage, I think) and it works fine. By that I mean that everything seems to work, including the touch screen. But I'm not actually using it as a convertible, nor, really, even as a laptop - I'm using it as a desktop, so I haven't really tried any software that would be specifically meant for "tablet mode. There's no pen for it - just a touch screen.

just curious...What distro do you have installed?

Tiny Core 17.0, the x86_64 build (it's what I run on pretty much everything), with jwm as the "DE".
