ZFS vs EXT4 vs ?: for workstations

I've learned a lot about ZFS lately, since I started using it for my TrueNAS. I know little about filesystems in general, though.

What are the merits of ZFS vs ext4 vs btrfs for workstation use? I do some video editing, and a lot of photo editing. Software-mirrored boot drives are important to me, since I often have to take my work on the road, and losing work/not being able to work would suck bigly.

I did set up ZFS mirrors on root on my Ubuntu laptop, and that wasn't something I'd want to have to set up very often (unless the UI installer will support it at some point). Does ext4/btrfs make it any easier to mirror the boot drives?
