I use a multi-monitor set-up and when I open an application, I want it to open its window in the same position it was when I last closed it. Is there a Linux distro that will remember window placement from one session to the next?

There are several Linux distros that support this feature. One of them is Ubuntu which uses a feature called Compiz, a compositing window manager that includes a plugin for remembering window positions. To enable this feature, you need to install Compiz Config Settings Manager (CCSM) and then go to the "Window Management" section to enable the "Place Windows" plugin. After that, your windows should open in the same position they were in when you last closed them.
