chgrp: missing operand after ‘guy@guy-Aspire-A515-52:/var/log/freshclam.log’
That message actually is informative, in that when you see a message like that from a command where you expanded variables, it suggests one or more of your expanded variables may have been unintentionally empty or unset.
might need to remove the : after 52 so it should look like
sudo chgrp guy@guy-Aspire-A515-52 /var/log/freshclam.log

If it still does not work try
sudo chgrp root /var/log/freshclam.log

That does not mean it will work. I still have reservations that clamav-daemon may be a fly in the ointment, but I have insufficient usage of AV under Linux to contribute much. Never needed it.

I only use clamav I do not use all that other stuff available in the Synaptic Package Manager - so my experience is CLI only

I just download the latest from their website an use Gdebi to install it - I use if I am transferring files to Windows from Linux and Vice-versa - sudo clamscan file

I know that - I only use pkexec to open the file manager and I always make sure policykit-1 is installed along with pkexec and polkitd and since I only use Debian - policykit-1-gnome as well
I'm sorry if you thought I may have assumed you didn't know that. I certainly didn't assume nor think that you didn't know that, and didn't mean to imply anything of the sort. I just used your quote as a jumping off point from a pkexec user. My post was just attempting to be explanatory for readers since both pkexec and sudo had been mentioned to basically try and do the same thing.

So the file seems to be written - try
sudo freshclam

Thank you for all your support. Uninstalled all Clam packages. Restarted system. Executed code:

sudo apt update && sudo apt upgrade

OS updated with no errors. Executed codes:

sudo apt install clamav clamav-daemon
sudo apt install clamtk
clamtk
sudo systemctl stop clamav-freshclam
sudo systemctl enable clamav-freshclam --now

Final result ClamAV updated with no errors.
