My router has the same problem with the below described problem; the firmware version is instead EdgeRouter ERLite-3/ERPoe-5 Firmware v2.0.9-hotfix.7:
https://community.ui.com/questions/...-doesnt-/d105ba1b-2ded-40bd-9aee-0cdc0b330e57

I also unchecked “VLAN,” “IPv4 Firewall,” “IPv6 Firewall,” and “DHCPv6 PD” from the Wizard setup and entered the 'SET' commands as described from the below link:

I tried different prefix delegation lengths (48, 56, 60, 64) and still was getting the same problem; there was always IPv6 '/128' address for WAN and nothing for IPv6 /64 addresses for LAN1. LAN2 is not connected. There were responses when using 'ping6 google' and 'ping google' from the router side.

However, from the Linux 22.1 side, newly installed Mint nothing configured other than using the defaults, the 'ping6 google.com' gave the following error messages:
From _gateway (fe80::nono:nono:nono:nono%eth0) icmp_seq=1 Destination unreachable: Beyond scope of source address
From _gateway (fe80::nono:nono:nono:nono%eth0) icmp_seq=2 Destination unreachable: Beyond scope of source address

Using 'ip a addr show', the results list only the link-local address starting with 'fe80'. It would seem that LAN1 (eth1) should get the IPv6 address for it to work on the Linux Mint side.

Does anyone have any ideas or know what is wrong with this problem?

Not sure what your problem is exactly but I have an UDM Pro but I have ipv6 working for WAN and LAN, for WAN I'm just using DHCPv6 for ipv6 with the "Prefix Delegation Size" set to what my is required by my ISP(You need to ask them what you need) and DHCPv4 for ipv4. Then for my default or lan or vlans I have the setting "Prefix Delegation Interface" set to the primary WAN interface.
