Restricted root or specific user

I want to restrict root and normal users for access /var/log directory and also other specific directories.
I would like to know the way of doing it.

If I understand correctly, you want to restrict access to /var/log and other directories to user root? Well, I don't think you can do that. You can however, restrict access to other users for those dirs but not root; root's the "Almighty" user, he can restrict you from accessing all files and folders, not the other way around.
