If I wanted to use the 5.x kernel on CentOS, I probably would just use Fedora.
But if you really want to compile your own kernel, I would probably at least go with CentOS 8.

If you think it's it's simpler, by all means use it. It appears to be more about certification than compiling a kernel.

Also the kernel examples it uses are pretty dated. (2.x and 3.x kernel)
The site I gave uses the 5.x kernel.
