Let's talk about Asahi Linux here. I'll start off with a question: how do I remove all those diagnostics from when AL boots (e.g. u-boot stuff, etc), and only leave the AL's logo on the screen?

No, it's not there. I think it's a level below grub
I don't think you can. From when I tried Ubuntu and Elementary on a Mac, I remember there were plenty of options built-in on the Macs' EFIs, and show before GRUB, that couldn't and shouldn't be removed
