Okay, firstly remember that when using Linux, an nVidia card is better than an ATI card. nVidia has some really nice Linux support, and a lot of cool games use their easy-to-install driver. I have a nVidia GeForce FX 5200 256MB DDR AGP 8x card with VGA, S-Video, and DVI out, and it works like a dream.
Now we have games. Hmm, not a lot to choose from, if you're not observant. Here's an easy one, do you have the retail copy of Unreal Tournament 2003? Okay, put the green CD in the drive. There should be a Linux installer file there, just copy it to your temp directory and run it. Sound might give you some minor trouble, but otherwise it runs very nicely.
Now, say you got an awesome rig to play games, and you want to play the best of the best - DOOM 3. http://zerowing.idsoftware.com/linux/doom/ gives a LOT of helpful info for installing DOOM 3. You go to id's FTP (the site I linked to should have a link) and in the DOOM 3 directory, go into the Linux folder and download the full version installer. Run the installer, then get out your CDs (or DVD) and copy over the .pk4 files into the DOOM 3 base/ directory (by default this is /usr/local/games/doom3/base/), then go into your desktop manager's menu, and click the DOOM 3 launcher (on GNOME 2.10 it's under "Other") or go to Run and type in doom3. Don't lose that CD key, you still need it. Also the Linux installers on id's site are already patched to the most recent version, no extra updating is needed.
I can keep going with id's game lineup under Linux, but the process is pretty much similar to DOOM 3. You go onto id's FTP, download the Linux binary installer, run it, break out the retail CDs, copy over the data files, and run. And some games you can compile from source, if you have the time =P
